The Ultimate Kale & Quinoa Salad [Recipe Enclosed]
January brings about a new year full of new beginnings, hope and of course health and fitness resolutions. Stay on track with your health goals this year with this delicious salad that also features the most talked about superfoods of the moment, kale and quinoa. Here at Karif Beauty, we love a good salad—it is an ideal way to get in your daily greens—but we are also aware that one of the biggest complaints is that they are not filling enough. After a holiday season of indulgence it can be hard to trade in  your grandma’s tamales or mac and cheese for lettuce.  We hear you.5G6A7151PrintCue in quinoa, which acts as the hearty base of this dish. Known as one of a few complete protein food, Quinoa is an ancient grain originating from South America. Quinoa is naturally gluten free and is high in not only protein but contains iron, b-vitamins, magnesium, phosphorus, potassium, and calcium among others. Medical News Today reports that consuming quinoa can reduce the risk of heart disease, type 2 diabetes, high blood pressure, colon cancer and obesity. To top it off quinoa contains antioxidants, which have been known to aid in skin health and beauty. Do we even need to mention the benefits of kale? You should know that this dark leafy green is a great source of vitamins a, c and k as well as omega-3 fatty acids and folate. Our quinoa and kale salad works best as a lunch alternative or as a side dish paired with grilled chicken or fish. Ingredients for quinoa:1 cup of quinoa – left in water overnight2 tablespoons of vegetable oil1 tablespoon of salt2 cups of water Step 1: Bring oil, salt and water to boilStep 2: Pour in quinoa and leave uncovered until most of the water driesStep 3: Cover and put on low flame. Done in roughly 35 minutes.  Ingredients for salad:3 cups of cut and washed kaleBalsamic Vinegar to taste ( we use roughly 3 tablespoons)Lime juice (optional)8-9 cherry tomatoes cut in quarters Step 1: While cooked quinoa cools, mix kale, balsamic vinegar, lime juice and tomatoes in bowl. Step 2: Let rest for about 10 minutes or while quinoa cools completely. Step 3: Mix quinoa and salad.  Tip: We find that this salad tastes even better the next day as the ingredients have time to saturate together. Other options are to top with feta cheese, nuts and/or cut sweet peppers.
