Summer Salad Recipes You Need to Try Out
The fourth of July weekend may be over but it doesn't mean that you can't enjoy other summer inspired foods. In this post, we introduce you to three of our favorite summer salads.  They are a light, low-calorie and refreshing way to enjoy summer in a healthy way.
Why salad?
Salad is a healthy alternative to may of the over-processed and inorganic foods out there.  It's a great away to stock up on the vital nutrients that all of the accompanying vegetables can provide, especially when served raw. The most important thing you need to know about salads is that the veggies in it are packed with plenty of water - which is exactly what you need during these hot summer months.  For example, common salad ingredients like cabbage, carrots, cauliflower, lettuce (iceberg), peas, peppers, spinach and tomatoes have over 90% of water in them! So here we go... These are the salads you need to make and try:
1. Shrimp Salad with Hominy, Arugula and Lime
Ingredients include: 3/4 shrimp, one 29-oz. can of hominy, 3/4 pound of cherry tomatoes, cilantro, cojita cheese, arugula and salt.

Step One: Clean shrimp, grab a mixing bowl and season your shrimp with your favorite seasonings. The less salt they contain, the better.

Step Two: Preheat a skillet and throw your shrimp in there. Sauté and cook to your liking over medium-low heat.

Step Three: Remove shrimp from skillet into a mixing bowl. Add hominy and your cherry tomatoes into the bowl.

Step Four: Mix all ingredients. Meanwhile chop your cilantro and avocado and add to mixing bowl.

Step Five: Fold in the arugula and season salad with salt and lime juice.

Step Six: Serve!

2. Grilled Bread and Marinated Tomato
Ingredients include: loaf country bread (cut 1/2 inch thick), ricotta salata crumbled, 2 pounds of heirloom tomatoes, garlic cloves, arugula, red onion, olive oil and vinegar. Grilled Bread and Tomato Salad A100830_FW_Seattle_4thofJuly2011

Step One: Mash garlic cloves and salt into paste. Afterwards, add tomatoes, onions, and vinegar into the mixture.

Step Two: Pour in some vinegar and olive oil into mixture. Season with salt and pepper.

Step Three: Prep grill. Add slices of bread onto grill. Brush bread with olive oil. One minute per side.

Step Four: Add grilled bread and arugula onto tomato mixture.

Step Five: Toss and serve!

3. Melon and Crispy Proscuitto Salad
Ingredients include: 12 slices of honeydew melon, one 4-0z. package of proscuitto meat, fresh mint, olive oil, white vinegar, salt, pepper, baby greens like arugula, feta cheese, pistachios

Step One: Cook or microwave proscuitto meat until crispy

Step Two: In a mixing bowl, combine the baby greens and mint.

Step Three: Lighty add salt and pepper to each slice of melon. Throw melon slices into bowl.

Step Four: Toss baby greens and melon slices with a soft vinaigrette

Step Five: Add slices of crispy proscuitto onto mixture. Top with feta cheese and chopped pistachios.

Step Six: Serve!
